Description

If you love pulled pork, you’ll go crazy over this simple barbecue pulled chicken! Perfect for tailgating, pot lucks, or just a regular Saturday night dinner with friends. Moms know best—this is my number one requested meal whenever I go home.

Ingredients

  • 1-½ pound Skinned And Deboned Chicken Thighs (use Dark Meat For The Most Flavor)
  • 1 Tablespoon Olive Oil
  • 1 cup Ketchup
  • ¼ cups Dark Brown Sugar
  • 1 Tablespoon Worcestershire Sauce
  • 1 Tablespoon Cider Vinegar
  • 1 Tablespoon Yellow Mustard
  • 1 teaspoon Ground Red Pepper
  • ½ teaspoons Garlic Salt

Preparation

Brown chicken for four minutes on each side in one tablespoon of hot oil in a large skillet over medium-high heat. Remove from heat and place in a slow cooker.

Combine ketchup and next six ingredients. Pour over chicken.

Cover and cook on high for one hour. Reduce heat to low, and cook five to six hours.

Remove chicken from sauce and then shred it into a large bowl, using your hands. Stir shredded chicken back into the sauce. Spoon mixture onto buns, serve over a salad, or coleslaw.

Yum! I’ve made this twice now and it is easy, simple and delicious. I love slow cooker recipes and think BBQ as winter comfort food is woefully underrated.

I made this over the weekend, it is amazing! The red pepper gives it a nice little kick, if you like spicy!

This was so easy and tasty! I love that it cooks in the slow-cooker, leaving me time to do nothing. I doubled it for lots of leftovers, again, so I can get away with doing nothing. (I just love that my family thinks I work so hard to make this.)

What a fabulous and EASY slow-cooker dish! I doubled the recipe this time and would consider quadrupling the recipe for freezing or cooking for a crowd (I use a large slow cooker.) Sides as suggested worked great. THANKS FOR ANOTHER WINNER!

For something so simple, this was absolutely delicious. I doubled the sauce and used a 3 lb. package of chicken thighs and 3 boneless/skinless breasts. We had plenty for dinner, a 2-cup leftover container, and about 1 quart that I froze. I’ll probably play with the sauce a bit in the future (I like the addition of molasses in my BBQ sauce, plus I’ll probably up the heat a bit), but I’m still giving it 5-stars because it was so easy. I didn’t brown the chicken, I made the sauce the night before, and then threw everything in the crockpot on high when I woke up and turned it down to low before I left for work.
