Description

This recipe came from my mother-in-law and was one of the first things I learned to make when first married. I never liked meatloaf until I tried this version.

Ingredients

  • ¼ cups To 1/3 Cups Bread Crumbs
  • 1 whole Egg
  • ⅓ cups Dried Vegetable/soup Greens (found In The Spice Aisle)
  • ¾ cups V8 Juice Or Watered Down Ketchup
  • Salt And Pepper, to taste
  • 1-½ pound Meatloaf Mixture (usually Ground Beef, Veal And Pork) Or Ground Beef
  • 1 cup Ketchup
  • ⅓ cups Brown Sugar

Preparation

Preheat oven to 350º. Mix bread crumbs (approximately 1/4 to 1/3 cup) and egg together to make sort of a thick paste. Add in soup greens. Mix in V8 juice, salt and pepper. Mix in with the meat by hand until well combined. Form into a loaf and place in an 11 in. x 7 in. baking dish. Bake for about an hour. About halfway through baking time, mix ketchup and brown sugar together and pour across the top of the loaf. Continue baking until done.

Thanks for sharing! I’m on a meatloaf kick right now. It’s never the same twice, because mine is more like meatloaf surprise; I don’t go off any recipes. So now, I’m rustling up a bunch to try to find one standard go-to for meatloaf! I’ll let you know how it turns out when I try it!

Great meatloaf, I was not able to find the dehydrated greens so brought a small packet of frozen mixed vege’s and put in a cup of them and also added, garlic and onion. We don’t eat much meat loaf in Australia but read this recipe and thought I would try it and really enjoyed it, so simple and easy and tasty.

OMG! Using v-8 to make meatloaf!!!!!!!!!!!!!!!!!!!!!!
Yes, it really does need that many !s. This is good stuff! Go make this. Quit reading this review, grab some meat and make this meatloaf!
P.S. Try ground turkey, it’s perfect for this recipe.
