This falls somewhere between a soup and a stew and it was a favorite recipe of my mother’s. She made her noodles from scratch until Rheames came out with a frozen version that works quite well. The noodles are available in most grocery stores in the frozen section where you find the ravioli and tortellinis. Your kids will love this!
Stew the chicken with the onion, peppercorns and salt for 30 minutes. Strain the broth and remove the chicken to cool. Return broth to a heavy Dutch oven and bring to a boil. Add chicken and frozen noodles. Simmer on low for one hour or until broth becomes thick and almost creamy. Add more chicken broth and salt and pepper to taste.

I know, it’s very “old school” in the best way! We recently had a flu fest at our house and this was the perfect antidote, I can’t imagine anything better when you need something warm and filling. Thanks Alexis:)

My mom made something very similar when I was a child and to this day, it is my ultimate comfort food. To thicken it even more, use a corn starch slurry until it is the desired consistency. This is also really good served over mashed potatoes!
