Description

These personal portions make meatloaf night fun for all!

Ingredients

  • FOR THE LOAVES:
  • 1 Tablespoon Olive Oil
  • 1 whole Yellow Onion, Chopped
  • 2 cloves Garlic, Minced
  • 1 pound Lean Ground Beef
  • 1 cup Italian Seasoned Bread Crumbs
  • ¼ cups Parmesan Cheese, Grated
  • 1 whole Egg
  • 2-½ Tablespoons Sauce (see Below)
  • Salt And Pepper, to taste

  • FOR THE SAUCE:
  • ¾ cups Ketchup
  • 1 Tablespoon Worcestershire Sauce

Preparation

1. Preheat the oven to 350ºF. Line a sheet pan with parchment paper (or tin foil).
2. In a medium-sized skillet, drizzle about a tablespoon (depending on the size of your onion) of olive oil. Heat to medium heat, then add the chopped onion. Saute until soft, then add in the minced garlic and continue to cook 1-2 minutes. Set aside to cool.
3. In a small bowl, combine the ketchup and Worcestershire sauce to make the sauce. Set side.
4. In a medium-sized bowl, combine the ground beef, bread crumbs, cheese, egg, sauteed onions and garlic, 2 1/2 tablespoons of sauce, salt and pepper to taste. Using your hands, fold the mixture to combine, taking care not to overwork it.
5. Mold the mixture into 4-5 miniature-shaped loaves on the lined sheet pan. With the back of a spoon, make a little indention or well, in the center of each loaf. (This will be to hold extra sauce!)
6. Bake in a 350ºF oven for 30 minutes then pull out and spoon sauce into the center of each loaf. Place back in the oven and bake for an additional 10-15 minutes.
7. Garnish with a little bit of chopped fresh parsley to serve (optional). Enjoy!
