Healthy and delicious with simple ingredients! Plus, individual portions are just more fun.
Preheat oven to 375 degrees (F).
In small skillet, saute the diced onions in one tablespoon of olive oil, season with salt and pepper, until tender. Let cool.
In a large bowl, add turkey, chopped spinach leaves, worcestershire sauce, dijon mustard, salt and pepper, bread crumbs, cheeses, egg white, and cooled onions. Gentle knead mixture with your hands, careful not to over mix, but until combined.
On a foil lined baking sheet, form 4 miniature loaves. Pour about 1/2 cup of marinara over the top of each meatloaf. Bake in the oven for 30 – 40 minutes.
