Description

Super easy, tasty casserole!

Ingredients

  • 1 box Chicken Stuffing Mix (You Can Use Any Package Stuffing Mix, Really)
  • 8 ounces, weight Sour Cream
  • 2 cups Grated Zucchini
  • 1 cup Grated Carrot
  • 1 can Cream Of Chicken Soup (again, You Can Use Any Type Of Cream Of Soup)
  • 1 whole Onion, Diced. Medium To Large Onion.
  • 1 whole Green Bell Pepper, Diced
  • 1 stick Melted Butter (or 1/2 Cup Melted Margarine)

Preparation

Make stuffing according to box directions.

When stuffing is done, place the stuffing in the bottom of a 9×13 baking dish.

Combine the rest of the ingredients together and mix well and then spoon the zucchini mixture over the prepared stuffing.

Pop into a 350 degree oven for 30-45, until the top is golden and bubbling. Allow to sit for 5-15 minutes and then dig in! Best casserole ever!!

It was good except I will parboil the veggies next time too!

The great thing about this recipe is that you can make it with cream of celery or cream of mushroom soup (especially nice for vegetarians) and it is still very yummy. I like to parboil the carrots, onion, zucchini first and then divide the stuffing mix and put a bit on top too.
