This chicken is dipped in taco seasoning and then rolled in crushed Sunchips. A different take on a taco.
Preheat oven to 350F.
Melt butter and add taco seasoning. Mix together.
In a separate dish, crush the Sunchips.
Wash and pat the chicken dry (I use chicken thighs or breasts). Roll chicken in the butter mixture, then into the crushed Sunchips.
Place on a foil-lined baking pan and bake for 45 minutes, or until chicken is done.

We had this last night and it was so good! Our new “go-to chicken” for sure. We pounded the chicken pretty thin and it took almost no time to cook (maybe 15 minutes). Can’t wait to make it again!!

Glad you enjoyed the chicken. I also might try marinating the chicken. I hadn’t thought of doing that. Yes it is a meal that teenagers can do while mom is at work or just needing a day off of cooking. Thanks for trying it.

We had this for supper last night and it was a big hit. My internet was down and I couldn’t consult the recipe and thought it was just corn chips I needed to get. When the internet came back up, it was then that I realized it was Sun chips I needed but had no time to go back to the store, so we used the corn chips.
With just the corn chips, it was great, but we definitely want to try it using the Sun chips next time. I am also going to try marinating the chicken in the butter/taco seasoning mix for a while, before cooking, to see what that might do to it.
All in all, very quick, and simple to make, and a recipe that my teens could easily do on their own as well. We’ll be doing this for supper again soon.
