Description

This is a dish my mother created one night by just throwing together ingredients she already had in the kitchen. It turned out to be a family favorite, and I still make it today. This recipe is versatile, and can be made using low fat/fat free ingredients, making it both healthy and delicious. Thanks, Mom!

Ingredients

  • 1 pound Chicken Breast
  • 1 jar Salsa, Medium Sized
  • 1 can Black Beans, Drained
  • 1 package Cream Cheese (can Be Fat Free)
  • 1 package Pasta (16 Oz. - I Like Penne Or Bow Tie)
  • Grated Cheddar Cheese (can Be Fat Free)

Preparation

Cut the chicken into bite-sized pieces.

Spray a skillet with Pam, and cook the chicken until well browned.

Add the entire jar of salsa and let simmer for 5 minutes.

Add the black beans.

Just before serving, add and stir in the cream cheese. Keep stirring until melted and all lumps are gone.

Pour chicken mixture over cooked pasta, stir until coated, and top with cheddar cheese.

Enjoy!
