Description

Oooey gooey yumminess! The lasagna hits the spot every time and my boyfriend loves me for it! He requests it once a week!

Ingredients

  • 2 pounds Ground Beef
  • 1 can (15 Oz. Size) Refried Beans
  • 1 can (4 Oz. Size) Chopped Green Chiles
  • 1 envelope (about 1 Oz. Packet) Taco Seasoning
  • 2 Tablespoons Hot Sauce
  • 12 ounces, weight Uncooked Lasagna Noodles
  • 4 cups Shredded Co-jack Or Monterey Jack Cheese, Divided
  • 1 jar (16 Oz. Size) Mild Salsa
  • 2 cups Water
  • 2 cups Sour Cream (optional)
  • 1 can (2 1/4 Oz. Size) Sliced Ripe Olives, Drained (optional)
  • 3  Green Onions, Chopped (optional)

Preparation

1. In a skillet, cook beef over medium heat until no longer pink; drain. Add the beans, chiles, taco seasoning, and hot sauce; mix well. In a greased 13 x 9 x 2 baking dish, layer a third of the noodles and meat mixture. Sprinkle with 1 cup of cheese. Repeat layers twice. Combine mild salsa and water; pour over top.

2. Cover and bake at 350 degrees F for 1 hour or until heated through. Uncover, top with sour cream, olives, onions, and remaining cheese. Bake 5 minutes longer. Let stand 10-15 minutes before cutting.

You mix the water with the salsa and pour it over the top, I’m sure it could be left out, or use less of. But the recipe tastes so good I’ve hardly tweaked it.

What’s the water for – do you cook the noodles before assembling – if so, that would take more than 2c water??
