Mexican “Flatbread” Pizza

Description

Another “16-Minute Meal” in my arsenal. Use this approach to use up leftovers in your fridge!

Ingredients

  • 1 can Large Biscuits (non Flaky) (8 Biscuits Per Can)
  • 1 whole Can (14.5 Ounce) Refried Beans
  • 3 Tablespoons Salsa Or Picante Sauce
  • 1-½ cup Grated Cheddar Cheese
  • Pico De Gallo
  • 2 cups Browned Hamburger Meat, Seasoned
  • Shredded Iceberg Lettuce
  • 3 Tablespoons Salsa
  • 5 Tablespoons Sour Cream
  • Cilantro For Garnish

Preparation

Preheat oven to 375 degrees. Flour work surface and roll out each biscuit until very flat. Brush very lightly with olive oil. Bake for 8 minutes, or until starting to turn golden. Remove from oven and set aside.

Mix refried beans with salsa. Heat on stovetop.

Heat up leftover ground beef.

To assemble, spread refried beans over each flatbread. Top with plenty of beef. Sprinkle shredded cheddar over the top. Return to oven for three minutes, or until melted and bubbly. Top with plenty of pico de gallo and lettuce.

Mix together salsa and sour cream. Drizzle over the top of each pizza. Garnish with cilantro. Cut into wedges and serve immediately.

This was so good! I made a little guacamole to add to ours. I was impressed with how well the “biscuit flatbread” went with the Mexican-style ingredients! We used Homestyle Buttermilk biscuits because those were the most plain ones our local grocery store had.

This dish is incredible! My family loves it.
I didn’t use any salsa just because I wanted my little children to eat this food. Came out really delicious

My husband was skeptical, but ended up enjoying these. I feel like they take longer than 16 minutes to make, but are still an easy dish. The flatter you roll the dough, the crispier the crust. I will make again!

my family really enjoys these! They love being able to customize their own meals, and I love that I don’t have to “short order chef” for them!

Love this! Made it for the first time tonight and it was a big hit with both my husband and son. I left the salsa out of the recipe and just put on the table for a topping. I was afraid if I added it to the beans it might be too spicy for my 3 year old.
