Description

This fast recipe is just what you need on a busy night. Oh yeah, and it’s freakin’ delicious!

Ingredients

  • 1 pound Lean Hamburger
  • 1 can (10.75 Oz. Size) Reduced Fat Cream Of Chicken Soup
  • 1 can (15 Oz. Size) Spicy Chili Beans
  • 1 can (10 Oz. Size) Diced Rotel, Drained
  • 1 bag (11.5 Oz. Size) Spicy Nacho Doritos
  • 1-½ cup Reduced Fat Shredded Cheddar Cheese

Preparation

Preheat oven to 350ºF.

Brown meat in a large skillet. Once meat is cooked, add soup, beans and Rotel and stir.

Crush about 3/4 of the Doritos and place them in the bottom of a 9×13 baking dish. Pour the meat mixture on top of chips. Add the rest of the crushed chips on top, and top with cheese.

Bake for 15-20 minutes or until the sides are bubbly.

This was excellent and easy to make. The best part was that my Husband fully approved, which is had to do as he’s a picky eater.

I made a few adjustments just for taste, which included: caramelizing an onion with 3 cloves garlic, adding a can of black olives, cumin powder, not putting chips on the bottom, and forgetting to drain the rotel before I added it.

Great recipe! It tastes kinda like chili and chip dip.

Loved how easy it was to make. The leftovers were pretty mushy due to the chips, so I think next time I will make it in a smaller casserole dish and put some of the extra meat mix in a separate dish without chips. That way I can add fresh crunchy chips the next day for leftovers.

Pretty good, tastes like a big bowl of chips and dip. Left overs were a little soggy.
