Description

This casserole combines everything I love about Mexican food. Beef, beans, salsa, and cheese! What more could a person need?

Ingredients

  • 1 pound Lean Ground Beef
  • 2 cans (16 Oz Each) Pinto Beans
  • 1 can (8 Oz. Can) Tomato Sauce
  • ½ cups Mild Or Medium Chunky Style Salsa
  • 1 teaspoon Chili Powder
  • 2 cups Shredded Colby-jack Cheese

Preparation

1. Heat oven to 375 degrees Fahrenheit.
2. Brown the ground beef over medium heat; when it’s browned, drain grease.
3. Rinse and drain beans in a strainer.
4. Mix beef, beans, tomato sauce, salsa, and chili powder in an ungreased baking dish.
5. Cover with lid (or aluminum foil) and bake for 40 minutes.
6. Remove the lid (or aluminum foil) and sprinkle cheese on top.
7. Continue baking uncovered for about 5-10 minutes, or until cheese is melted.

This was a big hit at my house. We served it over some Doritos chips and with a side of watermelon. Delicious!

This was so easy and so good! We had corn chips and sour cream with it, and all of my picky eaters liked it! This will become part of our normal rotation.
