Description

Cheese, spinach and Mexican flavors come together with chicken to create the ultimate comfort food.

Ingredients

  • 6 whole Chicken Breasts
  • 4 ounces, weight Cream Cheese
  • ½ cups Salsa Verde
  • 1 bunch Cilantro, Chopped
  • 1 teaspoon Cumin
  • ½ teaspoons Garlic Powder
  • 3 ounces, weight Fresh Spinach
  • 3 ounces, weight Pepper Jack Cheese, Shredded
  • 6 ounces, weight Tortilla Chips, Crushed

Preparation

Flatten out the chicken breasts to about 1/4″ thickness.

Blend together the cream cheese, salsa, cilantro, cumin and garlic powder to form a sauce.

Spread a spoonful of sauce across each breast. Top with spinach leaves and then cheese.

Roll closed and cover in crushed tortilla chips.

Bake at 350ºF covered for 30 to 35 minutes or until chicken is cooked through.

Yummy! I was just looking at a jar of Salsa Verde in my pantry wondering what the heck I was going to use it for! Ding ding ding, we HAVE a WINNER! :)

This sounds wonderful! All but the spinach…any ideas what I could substitute? Or just leave it out?

These were really yummy! I also added the rest of the salsa verde over the top of the chicken (for moisture) – GREAT flavors and a quick-make. Will be making these again!

We loved this! I used half my jar of salsa verde for the filling and dumped the rest over the top of the chicken roll ups before adding the crushed chips. They were fantastic and totally a keeper! We served it with Baked Brown Spanish Rice for a delicious meal.

I did the same thing, made them a little less dry on the outside, and added salsa. I also added a can of diced green chiles (hot) to the filling! Aye Carumba! :)

These are delicious and good for a weeknight meal. Sometimes I had trouble fitting all the ingredients on some of the chicken rolls. They were a little dry on the outside, so I dipped it in extra filling I had. Maybe if you put some salsa on the outside and then the tortilla chips? Either way, it was easy and delicious!
