Description

Fabulous Mediterranean flavors. Simple, tasty, and colorful!

Ingredients

  • 4 whole Boneless, Skinless Chicken Breasts
  • 4 whole Roma Tomatoes, Quartered
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • ¼ teaspoons Red Pepper Flakes
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Parsley, Fresh Or Dried
  • 1 Tablespoon Olive Oil
  • 8 ounces, weight Whole Wheat Pasta
  • 1 cup Feta Cheese

Preparation

Preheat oven to 350ºF. Place the four thawed boneless skinless chicken breasts in an 8×14 Pyrex dish. Cover the top with the quartered tomatoes.

Next, add all of the listed spices (salt, pepper, red pepper flakes, garlic powder, parsley) and then drizzle with olive oil.

Cover with aluminum foil, and bake in your preheated oven for one hour. Remove aluminum foil, and bake for another ten minutes.

While the chicken is baking, boil your whole wheat noodles with some olive oil to prevent sticking. Any variety that you have in your pantry will do, but I used Rotella style noodles. Also, from my personal experience, I have found that my favorite whole wheat noodles are the Trader Joe’s brand. If you do not have access to a Trader Joe’s try Ronzoni brand noodles, or go the old-fashioned route and use regular white pasta noodles.

Plate the noodles and chicken with plenty of tomatoes, and then sprinkle each plate with about 1/4 cup (1 ounce) of feta cheese. Now it is ready to serve all those you care for most!

It would also be pretty tasty with a few chopped kalamata olive garnished on top with the feta as well. All in all, we loved this dish! Simple, tasty, and colorful!

VERY easy and tasty! For the pasta I used fettucini tossed in a little olive oil and juices from the baked chicken dish. Served with homemade mozzerela garlic bread. :)
