Description

Healthy, easy and delicious! Oven-roasted chicken with lemon juice, olive oil, tomatoes, Kalamata olives and Feta cheese! A Sunday dinner family favorite!

Ingredients

  • ⅔ cups Lemon Juice
  • ½ cups Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Black Pepper
  • 1 Tablespoon Dried Oregano
  • 1 Tablespoon Paprika
  • 6 whole Chicken Thighs
  • 6 whole Chicken Drumsticks
  • 5 whole Tomatoes, Roughly Chopped
  • ¾ cups Kalamata Olives, Pitted
  • ⅓ cups Crumbled Feta Cheese
  • ⅓ cups Dry White Wine

Preparation

Heat oven to 425ºF.

In a large bowl, whisk together lemon juice, olive oil, garlic powder, black pepper, oregano and paprika. Add chicken and turn to coat.

Place chicken with lemon, olive oil mix into a large baking pan. Bake at 425ºF for about 45–50 minutes or until chicken is nicely browned. Remove from oven and top with chopped tomatoes, Kalamata olives and sprinkle with Feta cheese. Pour white wine around the chicken.

Return to oven for about 15 minutes. Serve with rice and a green salad.

Note: Chicken breasts can be substituted for thighs and drumsticks. If time is pressing, substitute boneless chicken breasts and cut the cooking time to 45 minutes.
