Description

This is a good supper, or lunch, especially for guys. It works very well on campouts, using foil packets instead of a casserole pan or dish. Also, if you want to make it vegan, leave out the meat.

Ingredients

  • 2 pounds Potatoes (3-4 Medium To Small)
  • 1 cup Cooked Ham (or Spam)
  • 2 whole Medium Carrots
  • ½ whole Green Pepper, Sliced 1/4 Inch Thick
  • 1 whole Medium Onion, Sliced 1/4 Inch Thick
  • 2 Tablespoons Olive Oil
  • 1 clove Garlic, Minced
  • ½ teaspoons Lemon Pepper
  • 1 teaspoon Seasoned Salt

Preparation

Slice the potatoes like French fries, and slice the ham or Spam like French fries. Slice carrots like French fries, and cut the pepper and onions slices in half. (Get everything in strips.) In a heavy skillet, heat oil. Fry ham, add potatoes, peppers, carrots, garlic and onions. Stir and add spices. Stir well, and cook only until vegetables start to soften. Pour into a lightly greased casserole dish, and bake covered in a 350-degree oven 40 to 50 minutes, or until fork tender.

Great with ketchup or picante sauce.
