Description

I found this copykat recipe for Panda Express’s Mandarin Chicken a long time ago. We love it. I have tweaked it to suit our family and make it a little easier. Yumminess!

Ingredients

  • 2 Tablespoons Sesame Oil
  • 3 cups Cubed Chicken Breast
  • ⅔ cups White Sugar
  • ½ cups Soy Sauce
  • 2 Tablespoons Lemon Juice
  • 2 Tablespoons Vegetable Oil
  • 1 teaspoon Fresh Minced Garlic
  • 1 teaspoon Fresh Minced Ginger
  • ½ cups Water
  • 8 Tablespoons Cornstarch

Preparation

1. Add sesame oil to wok or large skillet and heat on high.
2. Add chicken to wok and reduce heat to medium-high.
3. While chicken is cooking in wok, combine sugar, soy sauce, lemon juice, oil, garlic and ginger in a small saucepan.
4. Heat over medium until sugar is dissolved, stirring often.
5. Bring to boil.
6. Combine cornstarch and water.
7. Add it to the sauce pan, stirring often.
8. Reduce heat and simmer 4-6 minutes or until sauce thickens.
9. Pour sauce over the chicken and stir thoroughly to make sure all the chicken gets coated.
10. Reduce temperature to low and heat through until sauce is nice and thick.
11. Serve over white rice.

I made this and my husband and I LOVE IT!!!! I only did 6 TBLS of Corn Starch because I was worried about how thick it would get (not that two TBLS would make that big of a difference) but it turned out great! I added a little cayenne pepper because my hubby likes spicy and also added some diced red pepper chunks for color. We will definitely make this again!

Tasty! I liked it better than Panda Express–probably because I used superior chicken.

The sauce was excellent and easy. I think the cornstarch measurement is way off, though–8 tablespoons would be much much too much. I added three tablespoons and extra water, and even that was too much–the sauce was so thick, it was almost gloppy. Still tasted great, though. Maybe it’s supposed to be 8 teaspoons? Anyway, even that is more than you need. I’d start with 4 teaspoons and work your way up.

I also added broccoli and bell pepper to the chicken, and it was great. I’m sure you could put in water chestnuts, snow peas, onions, etc. and get a great result.
