Description

Sometimes you know you have to eat dinner but you just don’t feel like something heavy weighing down your soul. Yeah, it like that.

Ingredients

  • ¼ cups Fresh Lime Juice
  • ½ cups Fresh Cilantro
  • 4 cloves Garlic Chooped
  • 1 Tablespoon Honey
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 4 whole Chicken Breasts

Preparation

Add ingredients (except chicken) to a large bowl and stir them all together. It doesn’t matter what order, just dump them in there.

Add your chicken to the bowl and rub the ingredients over the chicken, making sure to coat each piece fully. Cover chicken with a towel and place in the fridge for at least 20 minutes.

Pull chicken out and either in a frying pan or a baking sheet (depending on how you like your chicken cooked), place chicken. Pour all the leftover marinade over the chicken and cook until done.

Don’t be afraid to pour any leftover juice from the cooking pan over the chicken. Mmm mmm good.

Lay chicken over rice and squeeze fresh lime juice over the whole dish, then serve.

Delicioso! I didn’t use the full 1/4 cup of lime juice, still was GREAT! Sooo easy and yummy! I also used white rice as a side! I baked this for about 25min at 350.

This looks perfect for dinner as I have all of the ingredients on hand. I think I’ll add lime zest to the marinade, too. And, I’m with Jack…definitely going on the grill!

Hmm. Frying pan or baking sheet. Nope.

I’m throwing these marinated beauties on the grill.

Btw, have you tried them grilled?
