Description

Creamy cheesy goodness… Enough said!

Ingredients

  • 1 pound Boneless, Skinless Chicken Breasts
  • Salt And Pepper, to taste
  • 2 Tablespoons Olive Oil
  • 2 heads Broccoli, Cut Into Bite Sized Pieces
  • 2 Tablespoons Unsalted Butter
  • 2 Tablespoons Flour
  • 4 cups Whipping Cream
  • 1 cup Grated Fontina Cheese
  • 1 cup Grated Cheddar Cheese
  • 1 pound Medium-sized Pasta Shells, Freshly Cooked

Preparation

Prepare barbecue grill (to medium heat).

Sprinkle chicken with salt and pepper. Brush both sides with olive oil. Grill chicken breasts until cooked through, about 6 minutes per side. Once the chicken is done, dice it and set aside.

Cook broccoli in a medium pot of boiling salted water until crisp-tender, about 3 minutes. Set aside.

Cook pasta in a pot of boiling water according to package instructions. When it’s done, drain and set aside.

Melt butter in heavy large saucepan over medium heat. Add flour and cook 2 minutes, stirring constantly. Gradually mix in cream. Bring to boil, reduce heat, and simmer 10 minutes, stirring frequently. Add both cheeses and stir until sauce is smooth. Season to taste with salt and pepper. Add the cooked pasta, chicken, and broccoli to sauce; mix well.
