Light and healthy chicken and rice recipe.
Cut the chicken into cubes. Chop the carrots and peppers.
Spray a large saucepan with non-stick spray. Add the chicken cubes to the pan over a medium-high heat and cook until no longer pink.
Add the remaining ingredients. Do not drain the pineapple.
Stir well. Bring to a boil. Then reduce heat to medium-low.
Cover and simmer for 20-25 minutes, until rice is tender. If using brown rice, make sure it is the quicker-cooking type (not instant). Stir occasionally.
