Description

This chicken is a frequent flyer in my kitchen. Several times a month I prepare chicken this way and not only is its use versatile but it is healthy, too (yeah)! Serve warm with some sides, chill the leftovers and you can use it in so many ways. I slice it and put it in salads, mix it in with a stovetop pasta mix, make sandwiches, dice and add to fried rice, top pizza, etc.

Ingredients

  • 1 cup Low-fat Ranch Dressing
  • 5 pounds Boneless, Skinless Chicken Breasts
  • 2 Tablespoons Capers
  • 2 ounces, fluid Lemon Juice

Preparation

Pour dressing in crock pot. Add chicken and stir to coat well. Top with capers and drizzle lemon juice over. Cook on low for 2 ¾ hours. (Note: crock pot times may vary.)

Serve or chill and refrigerate for one of many, many uses.
