Really easy, low-calorie dinner with LOTS of flavor. I usually serve this with a green veggie and it’s just perfect.
Preheat oven to 400ºF. Mix together the teriyaki sauce, honey, ginger and scallions. Put thighs and veggies in a Ziploc bag along with marinade and coat everything well.
Put in a baking dish and put in the oven for 25 minutes. Take out and turn chicken pieces over, then put back in the oven for 25-30 more minutes.
Serves 4 (300 calories per serving).
