Description

A twist on linguine with clam sauce!

Ingredients

  • 2 Tablespoons Olive Oil
  • ½ cups Chopped Onions
  • ½ cups Chopped Red Peppers
  • Salt
  • 3 cloves Garlic, Minced
  • 2 cans (6.5 Oz. Can) Minced Clams In Clam Juice
  • ½ cups Dry White Wine
  • 2 Tablespoons Butter
  • ½ pounds Whole Wheat Linguine
  • ¼ cups Parmesan Cheese, Plus More For Garnish
  • 2 slices Bacon, Fried And Crumbled
  • Chopped Parsley For Garnish

Preparation

Boil a pot of water for pasta and cook according to directions.

While pasta is cooking, heat a skillet on medium heat and add olive oil. Add chopped onions and peppers with a pinch of salt and saute until soft, about 8 minutes. Add garlic and stir for 30 seconds. Add in the canned clams (undrained) and bring the mixture to a boil. Add white wine and let mixture simmer for about 5 full minutes. Stir in butter.

Turn heat down to low and add the cooked linguine. Toss to allow the noodles to soak up the sauce. Add in parmesan cheese, crumbled bacon and parsley.

Serve with additional parmesan and crusty bread.

I only had one can of clams, but I also had a can of spicy fish steaks so I used both of them in this, adding a little extra wine for liquid. I only had dried parsley, so I dumped that in to simmer when I put the wine in. The seafood-loving teen gave a loud “mmmm, not bad” which is pretty high praise. Saving this for the future!
