Mix lime juice, chipotle chili powder, minced garlic, soy sauce, olive oil and 1/8 teaspoon of pepper to make a marinade. Pour marinade in a gallon bag with the steak and marinate for at least 5 hours or overnight.
For the smoky butter, mix all the ingredients together. Set aside.
Remove steak from marinade, trim fat and cut in half. I always split a steak with my husband so we are not eating too much beef. Sprinkle steaks with a little kosher salt on each side.
Grill for 3-5 minutes on each side depending on how you like your steak cooked. Remove from heat and allow steak to rest for 1-2 minutes before serving.
Serve steaks topped with smoky cilantro butter. Serve corn with this dish and you can use the extra butter on the corn.
