Description

If you love lime and cilantro, this is the dish for you.

Ingredients

  • 6 pieces Chicken Thighs With The Skin
  • 1 teaspoon Seasoned Salt (I Used Lawry's)
  • ½ teaspoons Ground Black Pepper, Or To Taste
  • ½ cups Fresh Lime Juice
  • ½ cups Fresh Chopped Cilantro
  • ½ cups Canola Oil
  • 2 Tablespoons Honey
  • 2 Tablespoons White Wine Vinegar

Preparation

Wash chicken and pat dry. Sprinkle seasoned salt and black pepper on each piece and rub in, getting under the skin as well.

In a separate bowl, mix the rest of the ingredients together except for the chicken.

Place all chicken pieces in a large Ziploc bag and pour the marinade over the top. Seal and place in a bowl in the refrigerator and marinate overnight turning every few hours to keep chicken evenly coated.

The next day heat your grill to high and then turn down to low. Place chicken skin side down on the grill and cook until you get a nice browned crust on the outside. Flip over and cook until chicken is done and juices run clear.

Serve with additional lime slices for the lime addicts in your life.
