Description

This is a regular part of the dinner “rotation” at our home. The kids love it!

Ingredients

  • 16 ounces, weight Cooked, Diced Chicken Breast
  • 16 ounces, weight Light Sour Cream
  • 2 cans (10 Oz. Size) Campbell's Healthy Request Or 98% Fat Free Cream Of Chicken Soup
  • Salt, Pepper And Thyme To Taste
  • 2 envelopes Ritz Reduced-fat Crackers (2 Sleeves, From A 16 Ounce Box)
  • 4 Tablespoons Poppy Seeds
  • I Can't Believe It's Not Butter Spray Butter, To Taste

Preparation

Combine diced chicken, sour cream and soups. Season to taste with salt, pepper and thyme. Pour into a 9 X 13-inch baking dish. Crumble crackers and sprinkle them over the top. Sprinkle poppy seeds over the top of the crackers. Spritz with spray butter until crackers are moist. Bake at 350 degrees (F) for 25-30 minutes, or until bubbly.

This dish worked really well! I would recommend a little less ritz crackers and poppy seeds, but that’s just my personal touches.
