A lighter twist to chicken parmesan.
1. Preheat oven to 375ºF. Put your chicken on a large cutting board. Cover with Saran wrap. Using a heavy object (such as a meat mallet), pound out your chicken breasts to desired thickness. The important thing is to make sure your breasts are even.
2. In a small shallow bowl, beat your egg. In a separate medium bowl, combine panko crumbs and parmesan cheese.
3. Season chicken with salt and pepper. Dredge both sides of chicken breast in egg. Dredge both sides of chicken in the panko mixture. Press mixture firmly onto chicken breast so it adheres. Repeat with other chicken breasts.
4. Place chicken in a greased baking dish. Bake at 375ºF for about 20-25 minutes, or until chicken is cooked through. Remove from oven. Top with desired amount of marinara sauce and cheese. Return to the oven and turn the broiler on. Broil 2-3 minutes (keep an eye on it!) until cheese is bubbly.
5. Serve chicken parmesan alongside pasta and additional marinara sauce!
