Description

A lighter version of a Chinese food favorite! A great meal in under 30 minutes!

Ingredients

  • FOR THE SWEET AND SOUR SAUCE:
  • 1 cup Pineapple Juice From The Drained Can Of Pineapple Chunk
  • ¼ cups Ketchup
  • ¼ cups Plain Rice Vinegar
  • 2 Tablespoons Cornstarch
  • 1 Tablespoon Honey
  • ¼ teaspoons Garlic Powder
  • 1 Tablespoon Soy Sauce, Or To Taste
  • FOR THE CHICKEN AND VEGETABLES:
  • 1 Tablespoon Cooking Oil (I Used Coconut Oil)
  • 3 whole Chicken Breast, Cubed
  • 3 cloves Garlic, Minced
  • 2 whole Bell Peppers, Stems And Seeds Removed Then Cut Into Medium Sized Pieces (I Use 1 Green And 1 Red)
  • ½ pounds Snow Peas
  • 20 ounces, weight Canned Pineapple Chunks In 100 Percent Juice, Drained Juice Reserved
  • 5 cups Cooked Rice, Or As Much As Desired, For Serving

Preparation

For the sauce:
Mix all ingredients together in a bowl and set aside.

For the chicken and vegetables:
In a large skillet heat oil over high heat until hot. Add chicken and garlic and cook until chicken is lightly brown on both sides. Add bell pepper and snow peas and mix until combined with chicken. Mix in pineapple chunks and sweet and sour sauce. Reduce heat to medium and cook until sauce thickens and vegetables are your desired level of done, about 4-5 minutes.

Serve with rice and enjoy!
