Description

A quick and easy dish that tastes great,perfect for weeknights as well as on New Year’s Day for that Italian good luck!

Ingredients

  • ⅔ cups Lentils, Rinsed
  • 3 cups Water
  • 12 whole Baby Carrots Chopped
  • 3 Tablespoons Extra Virgin Olive Oil
  • 1 whole Large Onion, Chopped
  • 2 cloves Garlic, Chopped
  • ¼ teaspoons Dried Thyme
  • Salt And Pepper
  • ½ pounds Pasta, Cooked Al Dente (broken Spaghetti, Elbows, Rotini, Anything You Like)
  • ½ cups Flat-leaf Parsley, Minced
  • Grated Cheese (we Use Pecorino Romano)

Preparation

Combine the lentils with the water, bring to a boil, then cover and simmer for 15 minutes. Add carrots and simmer for another 5-7 minutes.

While lentils are cooking, heat a dutch oven and add extra virgin olive oil, onion, garlic and thyme. Cook on medium heat until they are soft. Add lentils and carrots (do not drain!), along with salt and pepper, and simmer for another 2-3 minutes. Add pasta, stir together and cook a few more minutes, or until liquid is completely reduced.

Toss with parsley and cheese and serve.
