Description

Lentils are a super food in my pantry. They’re one of the ingredients I keep on hand at all times because they’re an inexpensive high protein food that also doubles as a comfort food for rainy day dinners.

Ingredients

  • 1 Tablespoon Extra Virgin Olive Oil
  • ½ whole Onion, Diced
  • 1 clove Garlic, Minced
  • 1 cup Green Lentils
  • 1-½ cup Vegetable Broth
  • 1-½ cup Water
  • 1 Tablespoon Spicy Honey Mustard
  • ¼ teaspoons Salt (optional Depending On The Sodium Content Of Your Broth)
  • 2 cups Spinach Leaves, Packed
  • 2 teaspoons Non Hydrogenated Non Dairy Butter
  • 12 whole Mushrooms
  • 1 whole Carrot, Sliced Thin On A Diagonal
  • 2 Tablespoons White Wine

Preparation

Heat the olive oil in a cast iron skillet or heavy pot. Add the diced onion and minced garlic and saute on medium low for 5 minutes. Add the lentils, water and broth and turn the heat up to high. When the broth starts to boil, turn the heat down to low and simmer for 30 minutes (the lentils should be tender and the broth absorbed). Turn off the heat and stir in the mustard and then the spinach.

In a separate pan, melt the Earth Balance. Add mushrooms and carrot and saute on medium low for about 10 minutes. Add the white wine and continue cooking until the wine is cooked off.

Plate the lentils and top with the carrots and mushrooms.

This is awesome. I really don’t like lentils all that much but I know they are good for you so I’ve been trying a bunch of different recipes. This one made me like them! :)

I am usually just okay-ish with lentils, but I did enjoy this dish. The onions really added a lot to the flavor of the lentils, and the veggies really jazzed up this dish. We couldn’t decide if we liked the lentils better with or without the mustard, so I split the batch and made some of each. I didn’t add the wine at all, but the recipe turned out just fine. This will be a repeat dish at my house.

Such a creative, healthy, tasty recipe! I’m trying to eat more lentils (for budget and diet reasons), and this recipe was perfect. The mustard adds a really great flavor. I liked it so much that I added way more than the recipe called for; I just squirted and tasted until I was happy with it. I’ll definitely be making this again!

Yuuuuum! This is very similar to a Lentil stew I make, so I was excited to try it. The mustard is a really nice addition.
