Description

A hearty and satisfying meatless curry dish that’s full of flavour and is really easy to make.

Ingredients

  • 2 cups Red Lentils
  • 3 cups Water
  • 2 teaspoons Vegetable Base
  • 2 teaspoons Olive Oil
  • 1 whole Onion, Diced
  • 2 cloves Garlic, Minced
  • 2 teaspoons Curry Powder
  • 1 teaspoon Turmeric
  • 1 teaspoon Ginger Root, Grated
  • 1 teaspoon Cumin
  • 1 teaspoon Sugar
  • 1 package (10 Oz. Size) Frozen Spinach, Cooked And Drained
  • 1 can (14 Oz. Size) Crushed Tomatoes
  • 1 pinch Salt

Preparation

Rinse lentils in cold water. In a saucepan, combine lentils and water. Bring to boil and add vegetable base. Simmer covered for about 20–25 minutes until lentils are soft and liquid has been absorbed. When done, remove from heat and set aside.

While lentils are cooking, heat oil in a large non-stick skillet. Saute onions and garlic for 3–5 minutes until soft. Add spices and sugar and cook for another minute. Add spinach, crushed tomatoes and cooked lentils. Add salt to taste. Serve over basmati rice.

Really liked the flavor of this (and my husband said it really tasted like Indian food from a restaurant!), although I think next time I will increase the tomatoes and spinach (and slightly increase the spices). It was a little drier than we liked and we just wanted more of the tomatoes and spinach.

Appetizing colors! I used 2 cups of water and 2 cups of vegetable stock to cook the lentils in order to make them softer. I find the dish a little bit bland, so may add a dash of chili powder next time.

I really enjoyed this recipe. Usually I find curry dishes to be overwhelmingly curry-ish, but this has a very even curry flavor. Next time I make it, I am going to add more vegetable broth so that it’s not as dry, although I wouldn’t describe the dish as dry; I just like it with more juice to go over the rice. If that makes any sense.

Tried this for dinner tonight and even my 1 year old ate it! I used chicken base instead of veggie base. My husband asked to have it placed in the permanent recipe box.
