1. Add the avocado and beans to a bowl. Sprinkle with salt and pepper and mash with the back of a fork until nicely combined.
2. Spoon the mashed avocado mixture down the center of the tortilla. Top with the spinach and a bit of lemon zest (or juice!). Roll and eat.
