Description

A delicious Summer meal, made with rotisserie chicken to make it easy enough for a weeknight dinner.

Ingredients

  • ½ pounds Spaghetti
  • 3 whole Lemons (approximately 1/2 Cup Juice Plus A Scant Tablespoon Of Zest)
  • ½ cups Parmesan Cheese
  • 2 teaspoons Fresh Thyme
  • ¼ cups Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • ½ cups Reserved Pasta Water
  • 1-½ whole Chicken Breasts, Cooked And Chopped
  • 3 Tablespoons Fresh Basil

Preparation

Heat a large pot of water to boiling, add a generous pinch of salt, and add spaghetti. Cook until al dente (about 6 minutes for whole wheat).

Meanwhile, in the bottom of your serving bowl, combine lemon juice, Parmesan cheese, lemon zest and thyme. Whisk together until incorporated. Slowly stream in olive oil while whisking. Add salt and pepper to taste.

Either drain pasta and reserve 1/2 cup of cooking water or transfer pasta with a slotted spoon from pot to bowl. (I just transfer the partially drained pasta with a slotted spoon since I’m going to add cooking water to thin the sauce anyway but if you are afraid you’ll end up with too much water, drain it first. Just make sure to reserve some of the cooking water – you may need anywhere from 1/4 to 1/2 cup of water.)

Toss pasta with sauce to coat evenly (add in reserved pasta water if needed to get it to your desired consistency) and add in chicken. Stack basil leaves, roll, and chiffonade into ribbons. Add to pasta and top with additional Parmesan if desired.

I wasn’t really in a cooking mood tonight, so I was looking for something super easy, and fast! This meal was exactly that. However, I wasn’t crazy about it. The taste was bland. I had all the items on hand, which made it very easy. I may try it again as a cold pasta salad, minus the chicken.

I made this Saturday and used a store bought Rotisserie Chicken. I added sliced mushrooms and artichokes drained well both fried in a bit of butter. The artichokes and mushrooms added bulk and more flavor. This was so Yummy and my whole family loved it. So easy too. A keeper!

I tried this recipe for supper last night. Super easy and delicious! We also had french bread with dipping oil & spices, and a salad. A great meal. I buy Schwann’s diced cooked chicken so that made this a fast and delicious meal.

this was fabulous! My whole family loved it and kept going back for more and more.

I used rotisserie chicken, canned artichokes and sliced mushrooms sauteed in butter/ EVOO and minced garlic.

I didnt have the Basil or Thyme but it was tasty none the less!

SO GOOD!

I made this last night for my husband and I (and our 18-month old daughter) and we all loved it! My husband will eat anything, but he definitely lets me know which meals he actually ‘likes.’ This was so light for a summer night pasta dish, but still filling with the whole wheat pasta and chicken. The lemon/basil/parmesan combo had a delicious flavor. We will definitely be making this again!

I LOVED this! I too added mushrooms and artichokes and I can’t imagine it without them. I sauteed them along with the cooked chicken in olive oil and some minced garlic. I really thought the taste was restaurant quality. I will definitely be making this again!

I made this tonight, and my husband and I really liked it. The kids, not so much, but they don’t really count. I usedleftover grilled chicken breast that had been marinated in buttermilk, thyme and garlic. I also pressed one clove of garlic into the sauce. Delish! Thanks.
