Description

Lemony sauce over shrimp with creamy rice on the side. Nice quick meal for during the week.

Ingredients

  • 1 pound Large Shrimp, Shelled
  • ½ cups Chopped Green Onions
  • 2 teaspoons Minced Garlic
  • 2 Tablespoons Margarine
  • 2 Tablespoons Oil
  • 3 Tablespoons Lemon Juice
  • ½ cups Grated Parmesan
  • Rice

Preparation

Prepare rice and add Parmesan cheese at the last minute.

Meanwhile, in medium saucepan, cook shrimp, onions, garlic in margarine and oil until shrimp turns pink.

Stir in lemon juice.

Serve shrimp and sauce over rice, or on the side.

This was SO delicious. I am partial to lemon flavored dishes, and this was super easy and very very satisfying. I also added lemon zest as well as lemon garlic salt and lemon pepper (did I mention I love lemon flavored dishes?). I have never thought of adding parmesan cheese to rice, but it was fabulous!! I love the chicken flavored rice-a-roni, and the parmesan made it even more delicious than usual. Great easy, quick meal idea.

This was delicious! I added lemon zest, grated pepper, several dashes of tabasco and a dash of salt to the sauce. It blended so nicely with the Parmesan rice. I served it with corn and cheese biscuits.
