Description

These Lemon Chipotle Mussels are easy and delicious, and they come together in less than half an hour!

Ingredients

  • 1 pound Fresh Mussels
  • 2 Tablespoons Extra Virgin Olive Oil
  • ½ whole Small Yellow Onion, Diced
  • 3 cloves Garlic, Minced
  • 1 dash Salt And Pepper, to taste
  • ½ teaspoons Chipotle Chili Powder
  • ½ whole Lemon, Cut Into Wedges
  • 1-½ cup White Wine (I Used Chardonnay)
  • ½ cups Fresh Cilantro, Chopped
  • 1 loaf Fresh Bread, For Dipping (I Like A Crusty French Loaf Or Sourdough)

Preparation

1. Clean and scrub mussels. Toss out any that are open. Set cleaned mussels aside.

2. In a large skillet (make sure it has a tight-fitting lid), heat oil over medium-high heat.

3. Add onion and garlic to oil and sauté until onion is translucent, about three minutes.

4. Add salt and pepper to taste.

5. Add chipotle chili powder to onion mixture and stir to combine.

6. Squeeze juice from lemon wedges into pan, and then toss the wedges right into the pan with the onions.

7. Add white wine to pan and stir to deglaze.

8. Add mussels to pan and cover with the lid. Cook 5-7 minutes until all mussels have opened. Remove from heat.

9. Throw out any mussels that are unopened.

10. Add chopped cilantro to mussels and stir to combine.

11. Pour cooked mussels and remaining cooking liquid (that’s the good stuff—yum) into a large bowl and serve immediately with lots of bread for soaking up the liquid.
