Description

Tangy herbed goat cheese and creamy mozzarella with fresh shaved asparagus tossed with zesty lemon.

Ingredients

  • ½ pounds Asparagus, Shaved
  • ¼ cups Fresh Lemon Juice
  • 1 clove Garlic, Minced
  • 1 teaspoon Olive Oil, Plus More For Drizzling
  • ½ teaspoons Salt
  • ½ teaspoons Black Pepper
  • 1 pound Pizza Dough
  • 8 ounces, weight Fresh Mozzarella, Sliced
  • 5 ounces, weight Herb Goat Cheese
  • ¼ cups Green Onion, Sliced
  • 2 teaspoons Lemon Zest

Preparation

Preheat oven to 500ºF (with the pizza stone inside, if you have one). Toss asparagus with lemon juice, garlic, 1 tablespoon olive oil, salt and pepper.

Drizzle olive oil over dough and bake 4-5 minutes. Remove from oven and lay slices of mozzarella over the dough. Pile on asparagus mixture and sprinkle with goat cheese crumbles and green onion. Bake 15-20 minutes or until asparagus edges are golden brown and cheese is melted.

Remove from the oven and top with lemon zest. Serve with wedges of lemon on the side.

Very tasty. Will make this again with the following modifications; thicker slices of asparagus and may try adding artichoke hearts or red peppers to the pizza. Loved the creaminess of the goat cheese!
