Description

It’s all the flavors of fall—sweet tender squash, smoky sausage and crunchy bread crumbs. Without all the hassle.

Ingredients

  • ½  Yellow Onion, Chopped
  • ½ pounds Bulk Sausage
  • ½  Delicata Squash (or Other Winter Squash), Chopped Into Bite Sized Pieces (see Note)
  • 1  Large Red Pepper, Stem And Seeds Removed, Diced
  • 1 cup Low Sodium Beef Broth
  • 1 cup Quick Cooking Brown Rice
  • ½ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • ¼ teaspoons Red Pepper Flakes
  • 1-½ cup Day Old Bread, Chopped Into Bite Size Pieces
  • 1 Tablespoon Olive Oil
  • ¼ cups Chopped Fresh Parsley

Preparation

1. Preheat your oven’s broiler.

2. In a large skillet, saute onion and sausage over medium heat until no pink remains. Do not drain.

2. Add squash pieces and red pepper and saute for about 2 minutes. Add beef broth and bring to a boil. Stir in rice, salt, black pepper, and red pepper flakes. Cover and cook according to package directions for the rice (I used quick cooking brown rice, which took about 5 minutes).

3. Meanwhile, place bread chunks on a small pan with a lip and toss with olive oil. Place in the preheated oven and broil for 3-4 minutes, stirring every minute, until browned and crisp.

4. To serve, spoon sausage mixture out of pan. Sprinkle with fresh parsley and bread crumbs or croutons.

Note: I discovered Delicata squash for the first time this season and I absolutely love it. It’s tender and sweet, and most importantly for this lazy girl, you can eat the skin! No peeling, no almost chopping your fingers off getting through that tough skin.
