Description

This is my favorite lasagna recipe, with a lot of sauce and cheese, and perfectly cooked noodles. You can easily substitute your favorite sauce and add any vegetables that you like.

Ingredients

  • 12 whole Lasagna Noodles
  • 6 cups Boiling Water, Or Enough To Cover Noodles
  • 1 pound Lean Ground Beef
  • 1 dash Salt, Pepper, Onion Salt, And Garlic Salt, To Taste
  • 2 jars Pasta Sauce, 26 Ounces Each
  • 1 pinch Crushed Red Pepper Flakes, Italian Seasoning, Dried Basil, And Dried Oregano, To Taste
  • 2 cups Cottage Cheese (I Prefer 2%)
  • ½ cups Grated Parmesan Cheese
  • 2 whole Eggs
  • 1-½ teaspoon Dried Oregano
  • 12 ounces, weight Fresh Mozzarella Cheese, Thinly Sliced
  • 2 cups Shredded Mozzarella Cheese
  • 1 Tablespoon Dried Parsley, For Sprinkling On Top

Preparation

1. Preheat oven to 350 degrees. Place lasagna noodles in a baking dish. Pour boiling water over them and let soak about 10 minutes.

2. Meanwhile, brown hamburger, and season to taste with salt, pepper, onion salt, and garlic salt. Add pasta sauce to hamburger, along with crushed red pepper, Italian seasoning, basil, and oregano, to taste. Cover and simmer about 10 minutes.

3. In a medium bowl, combine cottage cheese, parmesan, eggs, and oregano.

4. Spray a deep 9×13 pan with cooking spray. Add about a cup of sauce to the bottom, to keep the noodles from sticking and drying out.

5. Remove four noodles, one at a time, letting water drain. Lay noodles on top of sauce.

6. Add another cup of sauce to the top of the noodles. Spread half the cottage cheese mixture over the sauce, and layer half the fresh mozzarella.

7. Repeat with four more noodles, another cup of sauce, and remaining cottage cheese and fresh mozzarella.

8. Top with last four noodles and remaining sauce. Cover tightly with foil and bake 1 hour.

9. Remove lasagna from oven. Top with shredded mozzarella and parsley, and bake, uncovered, about 10 minutes or until cheese is melted. (You can even use the broiler, if you’re feeling adventurous. Just watch it closely.)

10. Let sit 10 minutes. Then serve.

This is some good lasagna! I used 2 cloves of garlic and 1/4 of a sweet onion in place of the garlic and onion salt, and ricotta instead of cottage cheese. I also put grated parm on top of the grated mozzerella, put it back in for 5 minutes and then did 2 minutes under the broiler.

My husband can’t stop eating it! Thank you!

Tried it this weekend and it was excellant. Just cheesy perfection and I WILL be making it again. I appreciate the tip of putting a bit of sauce in the bottom of the pan, I always had trouble with noodles sticking before this.

I followed the recipe with the exception of exchanging the cottage cheese with ricotta cheese and this recipe was excellent! Seriously, one of the best and easiest recipes to make!

I made this for company, and it was a disaster. I followed the recipe, except I used ricotta instead of cottage cheese. My noodles stuck together, and the finished dish was so soupy I couldn’t cut it. I used the 2 bottle of sauce, both 24 oz. I don’t know what happened. So embarrassing. I had to throw it out. Expensive mistake.

MMmmm…MMmmm…MMmmmm I altered to my own tastes but I really liked the way of doing the noodles. So easy. I hate boiling them as they always fall apart on me! This was great. Thanks!
