Simple, delicious and third helping worthy!
Brown your ground beef, onion, and pepper in a large Dutch oven over medium heat. It should be broken into fine particles and cooked till juices run clear. In the last minute or two add the garlic.
Now add brown sugar, broth, tomatoes, sauce, oregano, basil and salt. Bring to a boil. Reduce heat and simmer for about 20 minutes.
Add the noodles and simmer until they are tender (use the package instructions as a timing guideline). Stir in Parmesan when everything is done and remove the pot from the heat.
Turn on your broiler. Transfer soup into oven-proof soup bowls and top each with the mozzarella. Place bowls in the oven and broil for 3 to 5 minutes. It’s helpful to place the dishes in a rimmed cookie sheet or casserole dish so they are easier to put in and take out of the oven.
Serve with a big old I love pasta smile!
