Description

I’ve always had people coming back for more of these, even when they say, “Oh, I shouldn’t. I’m pretty full. But these are just so good!” They are delicious and perfect for when you are over burgers and hot dogs from the grill/BBQ.

Ingredients

  • ½ cups Greek Yoghurt
  • ⅓ cups Cucumber, Finely Diced (this Measurement Doesn't Need To Be Exact)
  • ½ teaspoons Crushed Garlic
  • 1 teaspoon Mint, Finely Chopped
  • ¼ teaspoons Ground Cumin
  • 1 pinch Salt
  • 1 teaspoon Lemon Juice (or More Depending On Taste)
  • 2 pounds Lean Ground Lamb Or Beef
  • 1 whole Egg
  • 1 Tablespoon Lemon Zest (about 1 Lemon)
  • 1 whole Large Brown Onion, Finely Diced
  • 1 teaspoon Crushed Garlic
  • 1 Tablespoon Ground Cumin
  • 2 teaspoons Ground Turmeric
  • 2 teaspoons Ground Alspice
  • 1 Tablespoon Chopped Mint
  • 2 Tablespoons Chopped Flat Leaf Parsley

Preparation

Make the tzatziki sauce first, then refrigerate while preparing and cooking the rest of the meal.

To make the sauce, add the first 6 ingredients into a small bowl and combine. Add about 1 teaspoon of lemon juice, then taste. (If you like more of a lemon kick, go ahead and add more. If you like more of the sourish yoghurt flavor, you can add more of that, too.)

Cover and refrigerate.

(This sauce makes a yummy dip for vegetables and crackers.)

Prepare the kofta by adding all remaining ingredients into a large bowl. Mix well (hands work best!).

Shape mixture into the shape of a hamburger patty, or a slim sausage shape, or a meatball. Traditionally, the mixture is shaped into sausages around a wooden skewer, but I find this too time-consuming. Yep, I’m a lazy cook. : )

Either BBQ or grill meat until cooked through.

Serve with the tzatziki sauce, a fresh green salad, and flatbread.

I made this last night and it was delicious. I had a hard time keeping the meat on the skewer, but the patty shape was just as tasty.

This sounds so delicious, especially because it’s tough to find good greek food in the midwest!
