Description

I know it’s a strange name but this makes the best oven-baked chicken breasts. Enjoy!

Ingredients

  • 3 pieces Boneless, Skinless Chicken Breasts
  • 3 teaspoons Ranch Dip Mix (from A 1 Oz Packet)
  • Pepper To Taste
  • 3 whole Egg Whites, Beaten
  • _____
  • COATING:
  • 1 cup Finely Crushed Nacho-flavored Tortilla Chips, Such As Doritos
  • ½ cups Freshly Grated Parmesan Cheese, Finely Grated
  • 1-½ teaspoon Ranch Dip Mix
  • Pepper To Taste
  • _____
  • Oil Or Cooking Spray
  • Prepared Ranch Dressing (regular Or Spicy) For Dipping

Preparation

Preheat oven to 350F.

Use paper towels to pat the chicken breasts dry. The chicken breasts must be very dry in order for the coating to adhere properly. Sprinkle each chicken breast evenly with one teaspoon of ranch dip mix (1/2 teaspoon on each side) and a little pepper. Set aside while you prepare the other ingredients.

Lightly beat the egg whites and set aside. In order to make 1 cup of finely crushed Doritos, grab a small handful of Doritos and lightly crush them in your hand so that they lay properly in a measuring up. Repeat. You will need a total of 3 cups of roughly crushed Doritos. Add the 3 cups of roughly crushed Doritos to a resealable bag and use a rolling pin to finely crush them. When you’re done, you’ll have about 1 cup of finely crushed tortilla chips. Transfer the finely crushed chips to a flat container that has sides. Add the parmesan cheese, some pepper, and 1 1/2 teaspoons of Ranch Dip Mix. Use your hands to mix the coating ingredients together. Use any leftover dip mix for another purpose.

Dip a chicken breast in the egg whites and then into the crushed chip mixture and press to firmly coat the chicken breast. Place the coated chicken breast onto a sheet pan spritzed with a little oil. Repeat with the other chicken breasts. Lightly spray the tops of the chicken breasts with oil or cooking spray. Bake for 28 to 30 minutes or until the juices run clear. Serve with some prepared Ranch Dressing.

We made this for dinner last week. It is a great way to do something different with chicken. We loved the cheesy flavor. Dipping it in ranch dressing made it taste even better.

This was great and super easy to make. Might I add that hand crushing the chips was a great exfoliate and beating them with a rolling pin was therapeutic! The chips gave a fantastic crunch to the breading and kept the chicken moist while cooking. The first bite did taste a bit like a corn nut, but once dipped in a little ranch it was the perfect flavor combo. My husband went nuts over this. Thanks for sharing a great recipe!

This recipe was very easy to make, and the whole family (hubby, 3 year old, and me) liked it. I give it 4 mitts and not 5 because even though it is very good, it isn’t spectacular. Everyone liked it, but it was no one’s favorite. Thanks for sharing!

I know the name is silly, but don’t let that distract you. It’s baked chicken, but the kicker is it’s breaded in crushed Doritos. Who wouldn’t love that? It was super easy to whip up and my husband went nuts over it. The Doritos give it a great crunch and keep the chicken moist while baking. That combined with a little Ranch to dip it in and you have a great flavor combo. I’m told it was still crunchy the next day!
