Description

Sweet, spicy, smoky.

Ingredients

  • 4 pounds Pork Back Ribs
  • FOR THE RUB:
  • 2 Tablespoons Paprika
  • 2 Tablespoons Chili Powder
  • 1-½ teaspoon Salt
  • 1-½ teaspoon Packed Brown Sugar
  • 1 teaspoon Each, Dry Mustard, Garlic Powder, Cayenne Pepper, Black Pepper
  • FOR THE KANSAS CITY BBQ SAUCE:
  • 2 Tablespoons Vegetable Oil
  • 2 cloves Garlic, Minced
  • 2 Tablespoons Paprika
  • 2 Tablespoons Chili Powder
  • 1 Tablespoon Dry Mustard
  • ¼ teaspoons Cayenne Pepper
  • 2 cups Ketchup
  • ½ cups Molasses
  • ⅓ cups Cider Vinegar
  • 3  Worcestershire Sauce
  • 2 teaspoons Liquid Smoke

Preparation

Stir together the ingredients for the spice rub. Rub spice mixture on both sides of the ribs.

Preheat BBQ grill to high heat and grease the grates. Turn off a section and arrange the ribs over the unlit section. Turn the other section(s) to low and cook the ribs for 2–3 hours, turning and rearranging the ribs every 30 minutes.

To make the barbeque sauce, heat oil in a medium saucepan over medium heat. Add garlic and cook for 1 minute. Add spices and cook, stirring, for 1 minute. Add remaining ingredients and simmer gently, stirring often, for 30 minutes.

To serve, brush or spread the sauce on both sides of the ribs, and serve the remaining sauce on the side.

Tip: make a double recipe Kansas City Rub and store in an airtight container up to 6 months. Use rub to flavor any grilled chicken or pork.
