Description

An easy throw-it-together dinner that’s low carb and full of flavor! Perfect if you’re trying the Keto diet or just want a delicious meal that’s good for your waistline. Just 8 ingredients and about an hour, and you’re on your way to a winner, winner, chicken dinner!

Ingredients

  • 2  Boneless, Skinless Chicken Breasts
  • Garlic Powder
  • Kosher Salt
  • Freshly Ground Black Pepper
  • 2 Tablespoons Extra Virgin Olive Oil
  • 4 ounces, fluid Neufchatel (1/3 Less Fat) Cream Cheese
  • 3 Tablespoons Jarred, Diced Jalapeños (or 3 Fresh Jalapeños, Cut-in-half, Seeded And Membranes Removed)
  • Shredded Cheddar Cheese
  • 4 pieces Roasted Bacon (See Note), Crumbled Or Bacon Bits

Preparation

Preheat oven to 375ºF.

Generously season both sides of chicken breasts with garlic powder, salt, and pepper. Spread oil on the bottom of baking dish. Lay seasoned chicken breasts on olive oil and dot with cream cheese. Spoon the diced jalapeños on top of the cream cheese and cover with shredded cheddar cheese.

Bake, uncovered, at 375ºF for about 50 minutes or until chicken is cooked through. Garnish with roasted bacon.

Note: To roast bacon, place baking racks on a baking sheet. Lay bacon slices on racks and roast at 400ºF until crisp (about 18–20 minutes).
