A healthy, quick meal with flavor! I served mine with green beans and pre-made, out-of-a-tub mashed potatoes because I don’t have time for real mashed potatoes during the week.
The number of servings will vary between 3-4 depending on how many fillets the pound has in it. Mine had 3 fillets.
1. Preheat oven to 350 degrees.
2. Pound fillets with a meat mallet.
3. Sprinkle one side of the fillet with some Mixed-up Salt, just a little will be sufficient. Spread a cheese wedge onto each fillet (one wedge per fillet). Roll the fillet with the cheese. Secure with a toothpick, if necessary.
4. Sprinkle Italian breadcrumbs onto a plate.
5. Roll each rolled fillet in the breadcrumbs for a light coating.
6. Place rolled fillets into a lightly greased (with Pam or other cooking spray) dish.
7. Lightly drizzle fillets with olive oil. If you want, you can sprinkle fillets with a few more breadcrumbs.
8. Place the dish into the oven and cook for 30-45 minutes, until the turkey is no longer pink. I cooked mine at 350 degrees for about 20 minutes, then turned it up to 400 for the last 10 minutes.

I made this last night, but used chicken breasts & parmesan bread crumbs (because that’s what I had on hand). It was very easy and really good! And my picky-eater son ate it. Definitely going to make it again. Thank you!
