Description

This is comfort food at its finest, with loads of vegetables cooked to perfection (crispy potatoes, soft and mellow onions and peppers, and sweet roasted garlic). From start to finish you’re under and hour, and each serving is only 420 calories. You just can’t beat it!

Ingredients

  • ¼ cups Extra-virgin Olive Oil As Needed
  • 5 whole Sweet Italian Sausage Links
  • 4 whole Medium White Potatoes, Peeled And Cut Into Wedges
  • 1 whole Large Sweet Onion, Chopped Into Large Sections And Petals Separated
  • 3 whole Large Sweet Peppers, Seeded And Chopped To Bite Size Pieces
  • 1 head Garlic, Cloves Peeled And Lightly Smashed
  • 1 teaspoon Italian Seasoning, to taste
  • 1 teaspoon Salt To Taste
  • 1 teaspoon Pepper To Taste

Preparation

Preheat your oven to 400 F with a rack in the middle position.

Drizzle a few teaspoons of olive oil into a large pan and heat over medium-high until just smoking. Add the sausage links and cook, turning every few minutes, until golden brown and crispy on all sides. This will take about 8 minutes. Turn off the heat and remove just the links to a plate to rest for 5 minutes.

Slice the sausage links into bite size rounds and return to the pan over medium-high heat. Cook for a few minutes, just until the cut ends are slightly browned and crisp. Use a slotted spoon to remove the sausage from the pan and place into a roasting pan, being sure the fat stays in the frying pan.

Add the peeled potato wedges to the frying pan, and cook in the remaining fat, turning every few minutes, until golden brown and crispy. Season with salt and pepper to taste, then remove them to the roasting pan.

Add the sliced onions, peppers, and crushed garlic to the frying pan, over medium heat. If they seem to stick a little, add a little bit more olive oil. Saute over medium heat until just starting to soften and a few edges have browned. Season with salt and pepper to taste, then pour into the roasting pan.

Season the sausage and pepper mixture with the Italian seasoning, give it a quick stir, then place it in the oven for 20 minutes, stirring once at the 10 minute mark.
