Description

Quick and delicious, this is a hearty grownup Italian version of a childhood classic. Good for a weeknight meal when you have no time to make dinner—which sometimes seems like every night!

Ingredients

  • 3 Tablespoons Olive Oil
  • 12 ounces, weight Italian Style Chicken Sausages
  • 2 whole Shallots, Finely Diced
  • 4 cloves Garlic, Finely Chopped
  • 1 can (20 Oz. Size) Stewed Peeled Tomatoes In Sauce, Chopped
  • 1 cup Cherry Tomatoes, Roughly Chopped
  • 1 teaspoon Dried Red Pepper Flakes
  • 1 can (14 Oz. Size) Cannellini Beans, Drained
  • ¾ cups White Wine
  • 1 cube Chicken Bouillon
  • Salt And Pepper, to taste

Preparation

In a large skillet heat the olive oil over medium high heat. Add the sausages and brown on all sides. Transfer to a separate plate, leaving the oil in the pan. Lower the temperature to medium and the shallots to the pan and saute until translucent. Add the garlic and saute another minute, making sure not to burn the garlic.

Add the tomatoes, red pepper flakes, cannellini beans, white wine and chicken bouillon, Cook for about 5 minutes on medium. Add the sausages back to the skillet and lower temperature to medium low. Cook uncovered for about 15-20 minutes until sauce thickens stirring occasionally. Season with salt and pepper to taste. Mangia!
