Preheat oven to 350 degrees.
In a large casserole or baking dish, combine sausage, potatoes and green peppers. Drizzle with oil and sprinkle Italian seasoning and garlic powder over top. Mix with hands, evenly coating sausage, potatoes and peppers with oil and seasonings.
Bake in a 350-degree oven until potatoes are cooked through (pierced easily with a fork) and sausage is nice and brown, about 2 hours. Stir a couple of times during the cooking process to cook evenly.
This recipe is extremely adaptable. Use more or less of any ingredient to your taste or needs. I don’t even measure anymore. I think the original called for minced garlic and diced onion but I’m too busy to mince and no one in my family likes onion.
This recipe can be made ahead and refrigerated until ready to cook. I hope you enjoy it as much as we do!
