Description

Israeli Couscous is a little pasta dish that is fabulous and so tasty!

Ingredients

  • 1 cup Israeli Couscous
  • 1-¼ cup Water
  • 3 whole Roasted Red Peppers
  • 2 cloves Garlic, Peeled
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Sherry Vinegar
  • 1 whole Avocado

Preparation

Cook the couscous with the water according to the package directions and set aside.

In a food processor combine the roasted red bell peppers, garlic, salt, pepper, olive oil and vinegar/lemon juice. Blend until everything is broken up and the sauce is consistent. Pour the sauce over the freshly made couscous. Serve with avocado.

It’s great recipe!!! I also added 2 chopped hard boil eggs and stir with couscous. Avocado of course on the top- so delicious. I was really suprise how everything taste sooooo gooood.

I loved it! A couple notes:

1) I used jarred roasted red peppers, but next time I’ll roast my own. I think the jarred variety added some extra acidity, so I added a pinch of sugar to help counteract that.
2) Perhaps because of the jarred red peppers, I wouldn’t be able to eat the couscous and sauce alone (too acidic). But once there’s a ton of avocado pieces stirred in (I also added fresh mozzarella pieces) it becomes divine.
3) I topped it off with 2 fried eggs, and loved how that made it a meal. Hardboiled eggs would be great too, stirred into the cousous.

Thanks for such a fabulous recipe! I’ll be making it again, be assured!
