Description

This slow cooker chicken recipe is spicy, sweet and has many other bold flavors with a minimal amount of work!

Ingredients

  • 1 pound Boneless Skinless Chicken Breast
  • ½ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • ¾ cups Chicken Broth
  • 8 ounces, fluid IPA Beer
  • ½ cups Freshly Squeezed Orange Juice
  • 4 whole Chipotles In Adobo Sauce (from A Can), Diced (more Or Less To Taste)
  • 14 ounces, weight Canned Petite Diced Tomatoes, Liquid Drained
  • 2 Tablespoons Worcestershire Sauce
  • 2 Tablespoons Honey, More Or Less To Taste
  • 1 Tablespoon Garlic Powder
  • 1 teaspoon Chipotle Chili Powder
  • 1 teaspoon Onion Powder
  • 2 Tablespoons Fresh Cilantro (garnish)

Preparation

Place the chicken breast in your slow cooker. Season with salt and pepper, and then add the chicken stock, IPA beer, orange juice, peppers, diced tomatoes, Worcestershire sauce, honey, garlic powder, chipotle chili powder and onion powder.

Cover and cook for 4 hours on high or 6-8 hours on low. Shred the chicken with two forks. Serve on top of rice or quinoa or in tortillas. Garnish with cilantro. Enjoy!

I think there is a typo on the amount of Chipotle Chili Powder…it should be 1 teaspoon, not 11. :) This sounds wonderful, I’m going to give it a try!

Very good flavor, it was a hit with my family.

I did modify a bit, as I didn’t have an IPA in the beer fridge. I used a Brown Ale instead and I don’t think it changed flavor appreciably. I also didn’t have any small taco size tortillas, so I used large tortillas and made enchiladas instead. Tossed a few tablespoons of enchilada sauce on them and a little cheese and baked them for 10 min in a 40 degree oven. They were marvelous.
