Description

I know this recipe sounds kind of odd. But seriously, this is one of the best things I have made in a while. Refried beans replace pizza sauce and it’s topped with cheese, jalapeno, chicken chorizo, onion and egg. Once you take the pizza out of the oven, add fresh tomatoes, cilantro and avocado. Super satisfying and perfect for a quick weeknight dinner.

Ingredients

  • 1 whole (Large Size) Pre-Baked Pizza Crust
  • 1 can (13.5 Oz. Size) Refried Beans
  • 4 ounces, weight Canned Diced Tomatoes And Jalapenos
  • ½ pounds Chicken Chorizo
  • 1 cup Shredded Cheddar Cheese
  • 4 slices (Thick Slices) Onion, Separated Into Rings
  • ½ whole Jalapeno, Thinly Sliced
  • 4 whole Eggs
  • 12 whole Cherry Tomatoes, Halved
  • ¼ cups Cilantro, Chopped
  • 1 whole Avocado (peeled, Pitted And Sliced)

Preparation

1. Preheat oven to 450 F. Place pizza crust on a greased cookie sheet.
2. In a small bowl, mix refried beans with diced tomatoes. Spread bean mixture evenly over pizza, leaving an even crust around the edges.
3. Cook the chorizo in a large frying pan on medium-high heat. Once it’s browned, remove chorizo from pan and set aside. Sprinkle cheese on the pizza. Place onion and jalapeno on top of the cheese.
4. Make wells inside the 4 largest onion rings. Crack one egg inside each ring. Add chorizo over top of the pizza.
5. Put pizza into the oven and cook for 15 minutes. Turn on the broiler and cook until eggs reach your desired doneness , about 2-3 minutes.
6. Once done, remove pizza from oven and top with fresh tomatoes, cilantro and avocado. Serve and enjoy.
